CONCEPT
Metissage is a French word MIX, which means the exchange of taste,
cultures and values.
We use selected ingredients to make simple bread using traditional methods.
Currently, the owner-chef is managing to improve the quality of Metissage in Santiago, Chile, South America. The Japanese side is managed by excellent staff.
Our best baker are doing their best. We wish everyone would be happy through eating our bread.

I use French flour and salt, the traditional method of long-term fermentation to enrich the aroma of wheat.
